Irish Pancakes with Maple Crema and Fresh Fruit

How to Make

Ingredients
1 cup
Birch Benders Classic Recipe Pancake and Waffle Mix
2/3 cup
Water
4 tbsps
Butter melted, plus more for cooking

Eggs
1/2 cup
Heavy or Whipping Cream
3 tbsp
Maple Syrup
1 cup

Directions
  1. Heat an 8″ cast iron pan over medium-low heat about ten minutes, giving it time to preheat. You made
  2. Sift Birch Benders into a bowl, and create a well with your fingers. Crack eggs into a seperate bowl and remove any bits of shell. Pour into the well.
  3. Mix with a fork, creating a heavy crumb. Add water, a little at a time, until a batter is formed. Add melted butter.
  4. Add 1 tablespoon butter to the pan before pouring in batter until the bottom is just coated, tilting the pan slowly.
  5. Let cook until bubbles for and pop. Flip once.
  6. Set aside and continue cooking pancakes.
  7. While pancakes cook, rinse berries and whip cream until just thickened. Mix in maple syrup.
  8. Fill pancakes with a few tablespoons of maple crema, top with fruit. Eat immediately.
