(Mostly) Paleo Blueberry Cupcakes with Lemon Cream Frosting

How to Make

Ingredients
1 1/2 Cup
Birch Benders Paleo Pancake & Waffle Mix
1/2 Cup
Coconut Sugar
1 teaspoon
Baking Powder
1/2 cup
Coconut Oil, Melted
2
Eggs
1 Cup
Blueberries, Fresh or Frozen
1/2 Cup
Organic Vanilla Frosting
2-4 teaspoon
Lemon Juice
Directions

For Cupcakes:

  1. Preheat oven to 350 and line pan with cupcake liners.
  2. For the cupcakes: Combine dry ingredients in a mixing bowl. In another bowl, mix wet ingredients, minus the blueberries.
  3. Add the wet ingredients to dry ingredients and mix until combined.
  4. Gently fold in blueberries.
  5. Fill cupcake liners ⅔ full and bake 12-15 minutes. Let cool completely.

For the Lemon Frosting:

  1. Mix vanilla frosting with 2 tsp of fresh lemon juice. Taste and add more lemon as desired.
  2. Spread frosting onto cooled cupcakes
  3. Top if fresh blueberries and lemon zest, if desired.
