Pineapple Upside Down Pancake Bites

Though called for in the classic recipe, Maraschino cherries are often filled with chemical dyes and corn syrup – so we used an organic cherry jam instead.

How to Make

Ingredients
2 Cups
Birch Benders Classic Recipe Pancake and Waffle Mix
1 1/4 Cup
Water
2 Cups
Frozen Pineapple
3 tsps
Cherry Jam
12 tbsps
Brown Sugar
Baking Spray
Directions
  1. Coat a muffin tin with your favorite non-stick spray or oil, preheat your oven to 350°F.
  2. Combine Birch Benders with water.
  3. Place 3 or 4 chunks of frozen pineapple in the bottom of each well, and a 1/4 teaspoon of cherry jam in the middle.
  4. Top fruit with one tablespoon brown sugar, and then with 2-3 tablespoons of pancake mix, until each muffin well is full.
  5. Bake 20-25 minutes until lightly browned and a toothpick inserted in the middle comes out clean.
  6. Let rest in the pan 10-15 minutes, before removing to a cooling rack by placing the rack upside down on top of the muffin tin, and flipping the whole thing over – this will ensure that your pineapple is on top. Be very careful at this stage – it’s very easy to make a mess!
  7.  Let rest another moment, and then Dig in!
