Chicken Salad Waffle Sandwiches

How to Make

1 cup
Birch Benders Classic Recipe Pancake Mix
3/4 cup
1 tbsp
Vegetable Oil
2 cups
Cooked Chicken Breasts, cubed. We like rotisserie chicken for this.
6 tbsp
2 tbsp
Olive Oil
2 tbsp
Crumbled Blue Cheese
Grapes, Halved
2 tbsp
Fresh Parsley, minced
4 dashes
Worcestershire Sauce
Salt and Pepper, To Taste
  1. Combine all waffle ingredients and cook according to your waffle maker’s instructions.
  2. Cut Waffles into four even sections, creating four pieces of ‘toast’.
  3. Combine mayonnaise, olive oil, Worcestershire, parsley, salt and pepper in a medium bowl.
  4. Fold in grapes and chicken, being sure all chicken salad ingredients are evenly combined.
  5. Assemble sandwiches, pack and go!

To kick it up a notch, add bacon, lettuce and cheese!
