Easy Peasy Healthy Blueberry Galettes

How to Make

1 2/3 cup
Birch Benders Classic Recipe Pancake & Waffle Mix
2 tbsp
cold water
2/3 cup
cold butter or coconut oil
2 cups
fresh blueberries
1 packet
reBlend Smoothie Shot
2 tbsp
arrowroot powder
1/2 tsp
1/4 cup
cane sugar (or sweetener of your choice)
  1. Preheat oven to 400°F
  2. Cut the cold butter into small cubes.
  3. In a bowl, combine the Birch Benders mix, cold water, and cold cubed butter, working with your hands until dough forms into a ball.
  4. Separate into two flattened balls of dough, and cover with plastic wrap in the fridge for a half hour.
  5. In another bowl, combine the blueberries, reBlend Smoothie Shot, arrowroot powder, salt, and cane sugar until well mixed together.
  6. When the dough is ready, place each ball on its own piece of parchment paper, and roll out into large, 1/2 inch thick circles.
  7. Scoop the blueberry mix on top of the dough, leaving 2 inches on each side.
  8. Fold over the edges and bake for 25 minutes, or until the dough becomes golden brown. Best when served hot with your favorite vanilla ice cream or whipped cream on top!
