Fruit Pizza

How to Make

Ingredients
3 cups
Birch Benders Classic Recipe Pancake & Waffle Mix (or mix of your choice)
1 1/4 cup
unsalted butter (or nondairy alternative)
2 packets
cordyceps mushroom elixir
1 cup
maple syrup
1
egg
2 tsp
vanilla
1 1/2 tsp
baking soda
3 cups
oats (or gluten-free oats)
1/4 cup
cream cheese (or nondairy alternative)
1/2 cup
thick vanilla greek yogurt (or nondairy alternative)
2 tbsp
coconut oil
Directions

  1. Preheat oven to 350°F.
  2. In a medium size bowl, combine butter, maple syrup, egg, and vanilla (use 1 tsp vanilla now, save 1 tsp for frosting). Mix until just combined. Add pancake mix, Mushroom Elixir, baking soda, and GF oats. Mix until incorporated.
  3. Grease a pizza stone large pan with coconut oil or cooking spray. Place dough in the middle of the pan and form a flattened circle. Leave about 1-1/2 inches around the edge as batter will expand as it cooks.
  4. Bake for 12-15 minutes, until the crust is golden brown. Allow to cool completely (place in fridge for faster cooking time).
  5. Make frosting. Combine all ingredients in a medium size bowl and beat until a fluffy frosting forms. Spread frosting on cookie crust and top with slices strawberries, blueberries, and a drizzle of manuka honey.
  6. Place in fridge to chill or serve immediately.
  7. Enjoy your fruit pizza!
