Choose one of the options below to replace the eggs called for on the back of the pouch:
3 tbsp flax meal + 9 tbsp water
1/4 cup mashed ripe banana
1/4 cup unsweetened applesauce OR 1/4 cup dairy-free yogurt
To make a flax egg, mix one tablespoon ground flaxseed meal with three tablespoons of water. Mix together, and let sit in your fridge for 15 minutes to set up and thicken. It’s that easy. Remember: make three flax eggs (3 tbsp flax meal + 9 tbsp water) for this recipe!
Make the cake per the recipe instructions. Instead of eggs, replace either flax eggs (see above), banana, applesauce or dairy-free yogurt.
Bake at 350 degrees for 23-27 minutes or until a fork stuck into the middle comes up clean.
