Keto Blueberry Lemon Zest Loaf

How to Make

Ingredients
1 pouch
Birch Benders Keto Pancake & Waffle Mix
3/4 cup
water
1/4 cup
lemon juice
2 tbsp
lemon zest
2
eggs, large
1 cup
blueberries (fresh or frozen)
1 tsp
vanilla extract
1 tub
Birch Benders Keto Vanilla Frosting
Directions
  1. Preheat oven to 350° F.
  2. Mix Birch Benders Keto Pancake & Waffle Mix together with water, lemon juice, lemon zest, eggs, blueberries and vanilla extract until incorporated.
  3. Spray or line loaf pan with parchment paper.
  4. Bake for 30 minutes or until golden.
  5. Remove from loaf pan and transfer to cooling rack.
  6. Microwave Birch Benders Keto Vanilla Frosting and stir until smooth.
  7. Glaze the loaf with desired amount of frosting.
  8. Slice and enjoy!
