Glazed Cinnamon Apple Muffins

How to Make

2 cups
Birch Benders Six Grain Cinnamon Pancake and Waffle Mix
1/2 cup
Apple Sauce
1/4 cup
Brown Sugar
1/2 cup
Almond Milk
1 1/2 tsps
Vanilla Extract
Egg Whites
1/2 tsp
Baking Soda
2 tbsps
1 cup
Confectioner's Sugar
1 tbsp
Lemon Juice
1 tsp
Lemon Zest
  1. Heat oven to 350°F.
  2. In a large bowl, blend mix, applesauce, brown sugar, milk, butter, baking soda, 1 tsp. vanilla and egg whites.
  3. Grease or line muffin tin, and pour evenly to fill 12 muffin wells.
  4. Bake 12-15 minutes, or until inserted knife comes out clean. Let cool in pan a few minutes before removing to a cooling rack.
  5. While muffins cool, make the glaze by whisking together all ingredients.
  6. Spread and drizzle glaze over muffins.
