Chocolate candy coating, either white or dark chocolate
Combine the Birch Benders Organic Classic Yellow Cake Mix, eggs, oil, and water and bake the cake as per recipe instructions on the package, baking for 23-27 minutes.
For the frosting: In a stand mixer with a paddle attachment, combine butter, confectioners sugar, heavy cream and vanilla extract and whisk until fluffy.
When the cake is baked and cooled, add the cake to the frosting and combine again until dough forms.
Roll into 1 tbsp sized balls and put in the fridge for about 20 minutes, so the dough gets more firm and easier to dip into the melted chocolate.
When chilled, remove the balls of dough from the fridge and re-roll the balls to get a rounder shape. Assemble dough balls onto lollipop sticks.
Melt the candy coating over low heat while constantly stirring. When chocolate is completely melted, dip the cake pops into the chocolate and set on parchment paper, or you can use a styrofoam block or small cardboard box with holes punched into it to stand cake pops on end.
Cake pops will harden and be ready to eat after about 30 minutes. Enjoy!
