Paleo Baked Apple Crisp

Birch Bender's Paleo Pancake & Waffle Mix

How to Make

2 Cups
Birch Benders Paleo Pancake & Waffle Mix
1/4 Cup
Walnuts, Chopped
1/4 Cup
Almonds, Slivered
2/3 Cup
Coconut Sugar
1/4 Cup + 1 Tsp
Ghee(+a little extra for for skillet)
Granny Smith Apples, Cored & Chopped
2 Tbsp
2 Tbsp
Grade B Pure Maple Syrup
2 Cans
Full Fat Coconut Milk, Separated
  1. Preheat oven to 350°F.
  2. In a small bowl, mix together apples, 1 tsp ghee, maple syrup, and cinnamon.
  3. Spoon about 1 tbsp ghee in cast iron on medium-high heat.
  4. Pour apple mixture into cast iron and spread evenly in skillet.
  5. In a separate bowl, combine Birch Benders Paleo Pancake & Waffle Mix, walnuts, almonds, coconut sugar, and ghee until well incorporated.
  6. Sprinkle the crumble you just mixed together over the apple mixture in the skillet.
  7. Place skillet in oven and bake for about 30-35 minutes or until crumble is browned and apples are tender.
  8. While the apple crisp is baking, pour the solid portion of coconut milk from can into a clean mixing bowl.
  9. Using a hand mixer, whip coconut milk until fluffy.
  10. Remove crisp from oven and let cool.
  11. Once cool, add whipped coconut topping and serve!
