Ingredients
- 2 Cups
- Birch Benders Paleo Pancake & Waffle Mix
- 1/4 Cup
- Walnuts, Chopped
- 1/4 Cup
- Almonds, Slivered
- 2/3 Cup
- Coconut Sugar
- 1/4 Cup + 1 Tsp
- Ghee(+a little extra for for skillet)

- Granny Smith Apples, Cored & Chopped
- 2 Tbsp
- Cinnamon
- 2 Tbsp
- Grade B Pure Maple Syrup
- 2 Cans
- Full Fat Coconut Milk, Separated
Directions
- Preheat oven to 350°F.
- In a small bowl, mix together apples, 1 tsp ghee, maple syrup, and cinnamon.
- Spoon about 1 tbsp ghee in cast iron on medium-high heat.
- Pour apple mixture into cast iron and spread evenly in skillet.
- In a separate bowl, combine Birch Benders Paleo Pancake & Waffle Mix, walnuts, almonds, coconut sugar, and ghee until well incorporated.
- Sprinkle the crumble you just mixed together over the apple mixture in the skillet.
- Place skillet in oven and bake for about 30-35 minutes or until crumble is browned and apples are tender.
- While the apple crisp is baking, pour the solid portion of coconut milk from can into a clean mixing bowl.
- Using a hand mixer, whip coconut milk until fluffy.
- Remove crisp from oven and let cool.
- Once cool, add whipped coconut topping and serve!
