How to Make

Ingredients
1 Pouch
Birch Benders Pumpkin Spice Paleo Pancake & Waffle Mix
2 Tbsp
Instant Espresso Powder
2/3 Cup
Water
1
Egg
2 Tbsp
Butter, Melted
2 Tbsp
Butter, Softened
1/2 Cup
All Purpose Flour
1/4 Cup
Brown Sugar
1 Tsp
Pumpkin Pie Spice
Directions
  1. Preheat oven to 350°F.
  2. Line muffin tins with baking liners or butter/oil so muffins won’t stick.
  3. In a bowl, mix Birch Benders Pumpkin Spice Paleo Pancake & Waffle Mix with espresso powder, water, egg and 2 tbsp melted butter until just combined.
  4. Scoop batter into prepared muffin tin until ¾ of the way filled, set aside.
  5. In a separate bowl, mix flour, cinnamon, sugar and softened butter until fully combined.
  6. Mix flour, brown sugar, pumpkin pie spice and 2 tbsp softened butter until crumbly.
  7. Add 2 tbsp prepared crumble on each muffin, press lightly.
  8. Bake for 20-25 minutes or until golden.
