Protein Pancake Breakfast Tacos

How to Make

Ingredients
1 pouch
Birch Benders Protein Pancake & Waffle Mix
2 1/3 Cups
Water
12
eggs
1 package
bacon
2
avocados
1 tub
pico de gallo
1 handful
fresh cilantro (for garnish)
Directions
  1. Prepare entire pouch of Birch Benders Protein Pancake & Waffle Mix per package instructions.
  2. While pancakes cook, cut bacon strips in half and cook until crispy.
  3. Cook egg(s), sunny side up recommended.
  4. Slice avocado.
  5. To assemble: Fold pancake in half and add bacon strip, avocado slices and sunny side up egg. Garnish with cilantro and pico de gallo.
