Pumpkin Spice Truffles

How to Make

Ingredients
1 Pouch
Birch Benders Pumpkin Spice Pancake Mix
2 1/3 Cup
Water
1 Container
Vanilla Frosting
1 Tsp
Pumpkin Pie Spice
3 Tbsp
Cinnamon
1 Cup
Sugar
1 Can
Whipped Cream
Directions
  1. Prepare Birch Benders Pumpkin Spice Pancake & Waffle Mix according to package directions and let batter sit while preheating skillet on medium high heat.
  2. Make several large pancakes and cook for about 2-3 minutes on each side.
  3. Let pancakes cool completely.
  4. Once cool, mash pancakes in a large bowl with a fork until crumbly.
  5. Add your favorite vanilla frosting and mix until smooth and frosting is completely incorporated.
  6. Roll mixture into bite size balls, then roll in cinnamon and sugar.
  7. Place each ball in a small cupcake wrapper.
  8. Top with a touch of whipped cream and a sprinkle of pumpkin pie spice.
  9. Serve and enjoy immediately.
