- Using a vegetable peeler, remove two strips of lemon zest from the lemon, about 1/2″ x 3″. Save the remaining lemon for another recipe.
- In a medium saucepan over medium heat, bring to a simmer water, sugar and lemon zest, stirring occasionally, until the sugar is completely melted and about 2 minutes more
- Remove lemon zest
- Add berries and bring to a simmer, stirring occasionally
- Reduce heat to low and let reduce about 20 minutes.
