Vegan Confetti Waffle Ice Cream Sandwiches

How to Make

1 pouch
Birch Benders Organic Confetti Pancake & Waffle Mix
1 tbsp
extra virgin olive oil or virgin coconut oil
1 pint
vegan ice cream (of your choosing)
sprinkles, crushed berries, nuts, chocolate sauce — anything you like!
  1. In a waffle maker, make Birch Benders Organic Confetti Mix as directed, adding the oil and enough water to make a thick batter.
  2. Cook waffles until golden brown and crispy, then put into the freezer for 10 minutes to cool.
  3. Cut frozen waffles into fourths, and assemble the sandwiches with your favorite vegan ice cream flavors. Dip immediately into garnishes, and freeze sandwiches again for 10 minutes before serving. Enjoy!
