Waffle Confetti Cake with Buttercream Frosting

How to Make

Ingredients
1 pouch
Birch Benders Organic Confetti Pancake & Waffle Mix
3 tbsp
oil (of your choosing)
1/2 cup
unsalted butter, softened
1 1/2 tsp
vanilla extract
2 cups
confectioners' sugar, sifted
2 tbsp
milk
Directions

    For Waffle Cake Layers:

  1. Preheat waffle iron.
  2. Make the entire bag by combining mix with 2 1/4 cups of water and 3 tablespoons of oil.
  3. Pour waffle batter onto waffle iron and cook until golden brown (time will vary by appliance).
  4. For Buttercream Frosting:

  5. Cream room temperature butter with a mixer until smooth and fluffy. Gradually beat in confectioners’ sugar until fully incorporated. Beat in vanilla extract.
  6. Pour in milk and beat for an additional 3 to 4 minutes.
  7. To Assemble:

  8. Alternate layers of waffle and frosting, then top waffle cake with remaining frosting.
  9. Optional: Top with additional sprinkles and candles to celebrate!
