Chocolate Chip Banana Paleo Muffins by Jess Gaertner @jess.holdthespace
- Preheat the oven to 350ºF.
- In a large bowl mash the bananas until smooth.
- Add cinnamon, nutmeg, salt, coconut sugar, and vanilla extract and mix well.Add pancake mix and mix well.
- Stir in milk, and coconut oil until fully incorporated. Fold in chocolate chips.
- In a baking cup lined muffin pan, spoon batter in until 3/4 of the way full (should make about 12 muffins).
- Bake at 350 for 18-20 minutes or until done.
