Apple Honey Crepes

2 large crepes easily serves 4 as a dessert.

How to Make

Ingredients
3/4 Cup
Birch Benders Classic Recipe Pancake and Waffle Mix
2/3 Cup
Water
6 tbsps
Butter
1
Apple, granny smith or other sour
2 tbsps
Honey
1/3 Pounds
Double Cream Cheese we used Fromager D'Affinois
1 tbsp
Bee Pollen
Directions
  1. Thinly slice apple and remove core. Slice cheese, set aside.
  2. Combine Birch Benders and Water, and 4 tablespoons melted butter.
  3. Heat nonstick or crepe pan and grease with 1 tablespoon butter.
  4. Pour 1/2 crepe batter into pan, tilting to spread batter into a thin layer.
  5. Let cook about 2-3 minutes, until gold brown. Flip gently and carefully, cook two minutes more.
  6. Repeat for second crepe.
  7. Arrange apple slices around crepe in a fan pattern. Place cheese slices in the center in a smaller fan.
  8. Drizzle honey over top, and sprinkle on bee pollen if desired.
