- Preheat Oven to 350°F.
- Cream together butter and sugars.
- Beat in egg and almond extract.
- Mix in Birch Benders Gluten Free Pancake Mix
- Fold in cherries and almonds.
- Using two tablespoons, form large balls of dough, about and place 3 inches apart on a baking sheet.
- Bake 10-12 minutes, until edges are crisp and start to darken.
- Let cool a few minutes on baking tray before removing to a rack to cool.
You won’t even be able to tell they’re gluten free.
