Paleo ‘Ice Cream’ Sandwiches

Birch Bender's Paleo Pancake & Waffle Mix

Frozen bananas, almond milk and cocoa nibs make all your paleo ice cream wishes come true.

How to Make

1 Cup
Birch Benders Paleo Pancake and Waffle Mix
3/4 Cup
1 1/3 Tablespoons
Coconut Oil
Frozen Bananas
3 Tablespoons
1 Cup
Almond Milk
1 Cup
Cocoa Nibs
  1. In a blender, combine bananas, honey and almond milk. Move to a freezer-safe container, fold in 2/3 cup cocoa nibs (may omit if prefered), and cover. Freeze at least 1 hour, and up to 1 week.
  2. Combine Birch Benders, coconut oil, and water. Make waffles according to your waffle maker’s directions – we like how cute they look when you pour a 1/4 cup of batter into each well to make imperfect round waffles. Make 12 waffle-rounds to make 6 sandwiches. Freeze waffles 1/2 hour.
  3. Scoop 1/2 cup ice cream in between two waffles. Roll edges in remaining cocoa nibs. Place on a parchment lined baking sheet, freeze an additional hour before serving.
