Peach Blueberry Dutch Baby

How to Make

1 cup
Birch Benders Classic Recipe
2 tbsp
Unsalted Butter
Large Eggs
1 cup
Whole Milk
Medium Peaches, sliced into ½ inch or smaller sections, pit and stem removed, plus extra for garnish
1/2 cup
Blueberries, plus extra for garnish
1/4 cup
Confectioner's Sugar, for dusting (optional)
  1. Preheat oven to 400°
  2. Place butter in a cold 12-inch cast iron pan, and place over medium heat. Add peaches and blueberries, turning to coat with melted butter, until glistening.
  3. In a blender, combine eggs, milk and Birch Benders, until lightly foamed.
  4. Pour batter into hot pan, and place pan in preheated oven.
  5. Bake for 15-20 minutes, until golden brown.
  6. Remove from oven and let sit about 5 minutes. Remove from pan gently and place on serving platter.
  7. Dust with powdered sugar, if desired. Arrange extra peaches and blueberries to garnish. Slice and serve.
