Peach Blueberry Dutch Baby
How to Make
Birch Benders Classic Recipe
Medium Peaches, sliced into ½ inch or smaller sections, pit and stem removed, plus extra for garnish
Blueberries, plus extra for garnish
Confectioner's Sugar, for dusting (optional)
Preheat oven to 400°
Place butter in a cold 12-inch cast iron pan, and place over medium heat. Add peaches and blueberries, turning to coat with melted butter, until glistening.
In a blender, combine eggs, milk and Birch Benders, until lightly foamed.
Pour batter into hot pan, and place pan in preheated oven.
Bake for 15-20 minutes, until golden brown.
Remove from oven and let sit about 5 minutes. Remove from pan gently and place on serving platter.
Dust with powdered sugar, if desired. Arrange extra peaches and blueberries to garnish. Slice and serve.
