White Chocolate Chip Pistachio Cookies

How to Make

2 1/2 cups
Birch Benders Classic Recipe Pancake Mix
1 cup
Butter Softened
1/4 cup
Brown Sugar
1/4 cup
Granulated Sugar
Large Eggs
3/4 cup
White Chocolate Chips
3/4 cup
Pistachios Shelled
1 tsp
Vanilla Extract
  1. Preheat Oven to 350°F, and line a baking sheet with parchment paper.
  2. In the bowl of a stand mixer, cream together butter and sugars before adding eggs.
  3. Stir in vanilla extract.
  4. Sift Birch Benders before adding to the wet ingredients.
  5. Fold in pistachios and white chocolate chips.
  6. Using two teaspoons, form balls of dough, and arrange 2 inches apart on parchment-lined baking sheet.
  7. Bake 8 to 10 minutes.
  8. Let cool a few minutes before immediately eating them all.
