I love a quick and easy mix and Birch Benders is one of my paleo favorites when it comes to mixes, especially when I travel. I tuck a bag into my suitcase for those “just in case” moments where I’m literally stuck with no gluten-free or grain-free (paleo) options and I feel like I am going to starve to death. INGREDIENTS
For the pancakes:

Whisk together peanut butter and 1/2 cup of milk slowly, so as not to splash. Mix in Birch Benders.
Slowly add last 1/4 cup of milk, stirring until mostly combined, with a few lumps and bumps here and there. Let rest 5-10 minutes for extra fluffiness.
Heat a non-stick griddle to medium-high and lightly grease with vegetable oil. Using a 1/3-cup measure, scoop mix into pan, cooking until bubbles have formed and mostly popped before flipping.
Top your pancake stack with jam or jelly, or layer between for extra fruit. Serve hot or cold.

Lizzi Ackerman intended to be a scientist. But science took her in a different direction, away from the lab and into a kitchen.
Now Ackerman, along with her husband, Matt LaCasse, are the owners of natural pancake mix company Birch Benders. The business was born in Boulder, and has grown into multi-million dollar enterprise in just over two years.
Ackerman, 29, landed a spot on Forbes’ 30 Under 30 list, and Birch Benders earned some ink in a recent New York Times piece about Boulder’s natural food scene.

Lizzi Ackerman had her mind set on being a doctor. That decision, made after a life-changing event, seemed perfect – until it wasn’t. “As much as I loved medicine,” admits Lizzi, “it wasn’t the right fit.” But that didn’t stop her from being a doctor; she just went a different direction. Birch Benders, a pancake mix business that is working to dent sales of Bisquick and Aunt Jemima, got its first shot at Lucky’s, an organic grocery chain that Kroger took a stake in last year. Matt LaCasse, one of Birch Benders’s founders, had landed in Boulder in 2011 after graduating from Yale and was looking for a way to stay at the end of a long ski season.
In 2011, Lucky’s asked Birch Benders to demonstrate its product in one of its stores. Customers flocked to its table for samples served with juice. But it didn’t move off the shelves.
The grocer stuck with Birch Benders, however, through four or five iterations of the product, Mr. LaCasse said. Once the company got the price down to $4.99 and $5.99 for a one-pound pouch, Birch Benders began flying off the shelves.
Now Birch Benders mixes are sold in Target, Safeway, Giant Eagle and Whole Foods.
“I don’t know that in another city, a retailer would have stuck with us for as long as Lucky’s did,” said Lizzi Ackerman, the company’s chief operating officer, who was just named to the Forbes “30 Under 30” list of food entrepreneurs. “They really gave us a chance to get it right.”
