Paleo Maple Almond Pancakes

Paleo Maple Almond Pancakes

I love a quick and easy mix and Birch Benders is one of my paleo favorites when it comes to mixes, especially when I travel. I tuck a bag into my suitcase for those “just in case” moments where I’m literally stuck with no gluten-free or grain-free (paleo) options and I feel like I am going to starve to death. I need some clean carbs as I am active and cannot live on fats and proteins alone, and a satisfying recipe like this one for paleo maple almond pancakes does the trick.

These pancakes are a real twist to the usual that is out there on the internet, I think you will really like them!  While you’re at it, take a look at some of the other unique and delicious Birch Benders recipes that have been featured on my site like paleo pizza and their delicious snack bites.

“There is hardship in everything except eating pancakes,” the English preacher Charles Haddon Spurgeon once said, and all we can add to that is a hearty “Amen!”

March 7 marks IHOP’s National Pancake Day and (not that we need an excuse) we’re fully prepared to flip for a stack of flapjacks. Looking for a hot deal on hotcakes? Head to IHOP for a free short stack of buttermilk pancakes from 7 a.m. to 7 p.m. (The chain asks customers to make a charitable donation in hopes of raising $3.5 million for children battling critical illnesses; the company has raised $24 million since Pancake Day began in 2006).

If you’re in a rush and would rather dine at home, pick up Birch Benders‘ new Peanut Butter Protein Pancake & Waffle Mix (available exclusively at Sprouts for $5.99). Just add water to the all-natural mix for creamy cakes loaded with 16 grams of protein per serving.

The Denver-based “micro-pankery” also offers Paleo, gluten-free, chocolate chip, buttermilk, six grain cinnamon and other flavors. Two words: Pancake buffet.

BIRCH BENDERS CLASSIC PEANUT BUTTER & JELLY PANCAKES
Makes 2 stacks; total time: 20 minutes

INGREDIENTS
For the pancakes:

  • 3/4 cup Birch Benders Classic Pancake and Waffle Mix
  • 3/4 cup whole milk
  • 1/4 cup Justin’s Classic peanut butter
  • Vegetable oil for greasing
  • Jam or jelly of your choice

DIRECTIONS

Whisk together peanut butter and 1/2 cup of milk slowly, so as not to splash. Mix in Birch Benders.

Slowly add last 1/4 cup of milk, stirring until mostly combined, with a few lumps and bumps here and there. Let rest 5-10 minutes for extra fluffiness.

Heat a non-stick griddle to medium-high and lightly grease with vegetable oil. Using a 1/3-cup measure, scoop mix into pan, cooking until bubbles have formed and mostly popped before flipping.

Top your pancake stack with jam or jelly, or layer between for extra fruit. Serve hot or cold.

Birch Benders All-Natural Gourmet Pancakes Aren’t Just for Breakfast!

In my third trimester of pregnancy I had a fierce craving for pancakes, one so fervent that I kept a pitcher of batter at the ready in the fridge. It’s no wonder our daughter frequently calls out for the food that nourished her daily for months in the womb (we joke that she’s part pancake).

My love for pancakes has not waned though I no longer keep a pitcher full of batter for quick fixes. For busy weekday mornings, however, I reach for quality mixes that require just one ingredient: water. My newest discovery are the pancake and waffle mixes from Birch Benders Micro-Pancakery. Birch Benders are made by Matt and Lizzi, passionate pancake lovers like myself, who wanted to create better than restaurant pancakes that are easier to make than from scratch. Their delicious mixes have certainly passed the taste (and ease) test in our house!

Birch Benders all-natural gourmet mixes come in a variety of flavors like Buttermilk, Six Grain and Six Grain Cinnamon, Chocolate Chip, their Classic blend, and Sweet Potato, as well as Gingerbread Spice, Pumpkin Spice, and Double Chocolate Peppermint, so you can get a taste of the holiday season any time of the year. They also offer specialty mixes which include Paleo, Gluten Free, Protein, and as of today, March 1, a new Peanut Butter Protein mix, which boasts 16 grams of protein per serving, serves as a great source of calcium, and contains no GMOs, trans fat, or BPA!

Their delicious mixes are also super versatile and can be used in many dishes other than a traditional breakfast. Use their Classic mix (or Paleo) for a tasty pizza crust or to whip up some scrumptious Mini Muffin Chicken Pot Pies. The Gluten Free mix can be used as a coating for Oven Baked Fried Shrimp or to bake up a gluten free Orange Marmalade Bundt Cake. Check out all their yummy recipes here for inspiration. You might just find the need to keep a pitcher of batter in the fridge yourself.

Introducing Lizzi Ackerman of Birch Benders Micro-Pancakery

Lizzi Ackerman had her mind set on being a doctor. That decision, made after a life-changing event, seemed perfect – until it wasn’t. “As much as I loved medicine,” admits Lizzi, “it wasn’t the right fit.” But that didn’t stop her from being a doctor; she just went a different direction. Lizzi left medicine behind to become Dr. Pancake.

While her title might sound like a joke, Lizzi’s company (which she runs with her husband, Matt) is anything but. Birch Benders Micro-Pancakery is one of the fastest growing pancake mix brands. What started as a solution to a morning problem – how to make natural, good-for-you pancakes as easy as to make as the conventional brands – has since turned into an incredibly successful business. Birch Benders is so successful in fact that they’ve landed in Targets nation-wide. And we trust Target.

In this interview Lizzi shares what it takes to be an entrepreneur, what challenges the company is tackling and even what makes the perfect pancake. We have a feeling Dr. Pancake won’t lead us astray.

Foodies Know: Boulder Has Become a Hub for New Producers

Birch Benders, a pancake mix business that is working to dent sales of Bisquick and Aunt Jemima, got its first shot at Lucky’s, an organic grocery chain that Kroger took a stake in last year. Matt LaCasse, one of Birch Benders’s founders, had landed in Boulder in 2011 after graduating from Yale and was looking for a way to stay at the end of a long ski season.

In 2011, Lucky’s asked Birch Benders to demonstrate its product in one of its stores. Customers flocked to its table for samples served with juice. But it didn’t move off the shelves.

The grocer stuck with Birch Benders, however, through four or five iterations of the product, Mr. LaCasse said. Once the company got the price down to $4.99 and $5.99 for a one-pound pouch, Birch Benders began flying off the shelves.

Now Birch Benders mixes are sold in Target, Safeway, Giant Eagle and Whole Foods.

“I don’t know that in another city, a retailer would have stuck with us for as long as Lucky’s did,” said Lizzi Ackerman, the company’s chief operating officer, who was just named to the Forbes “30 Under 30” list of food entrepreneurs. “They really gave us a chance to get it right.”
